Delicious dishes made with buckwheat flour and Soba
buckwheat mash
Materials (3 to 4 divided)
- Buckwheat flour 1 cup
- Boiled water 2.5 cup
Recipe
Mix 1 cups of buckwheat flour with 2.5 cups of boiled water (3 cups if desired) and serve with seasoned sauce.
It can be served with spices, seaweed, etc. for an even better taste.

buckwheat crepe
Materials (approx. 5 pieces)
- Buckwheat flour 1 cup
- Milk 1.5 cup
- Egg 1
Recipe
Mix 1 cup buckwheat flour, 1.5 cups milk, and 1 egg, spread thinly on a pan, bake, and serve with jam, cheese, etc.
Old-fashioned buckwheat dumplings
Materials (3 to 4 divided)
- Buckwheat flour 2 cup
- Boiled water 2.5 cup
- Azuki bean paste, vinegared miso, walnut miso, etc.
Recipe
Mix buckwheat flour with boiling water, roll into ball-shape, bake slightly in a pan, and serve with azuki bean paste, vinegared miso, or walnut miso.
Spicy Kimchi Soba
Materials (4 divided)
- Buckwheat noodle 400g
- Cucumber 1
- variety of radish 100g
- Ham 3 slices
- Enoki mushrooms 100g
- Buckwheat noodle soup 100cc
- Kimchi stock to taste

preparation
Cut cucumber and ham into small pieces.
Recipe
- Boil enoki mushrooms quickly and drain.
- Boil buckwheat over high heat for about 5-6 minutes, then drain in a colander and cool in cold water.
- Place boiled soba noodles on a plate, top with cucumber, shredded ham, and enoki mushrooms only, and pour kimchi sauce over the top.
- Serve with buckwheat soup and mix together.

Cold soba noodles with natto and yam
Materials (4 divided)
- Shinshu Madarao Kogen Soba 300g
- Chinese yum 400g
- Green onion to taste
- ground natto* 1 package (*fermented soybeans)
- grilled laver to taste
- egg yolk 1
- buckwheat noodle soup 350cc

preparation
Cut the green onion into small pieces. Mince the grilled laver.
Recipe
- Grate long potatoes, add an egg yolk and mix in a mortar and pestle, then add buckwheat sauce
- Mix in the ground natto.
- Boil Shinshu Madarao Kogen Soba over high heat for 5 to 6 minutes, remove from heat, drain in a colander and cool in cold water. and pour ② over the top.
- Finish by sprinkling with small pieces of green onion and grilled nori.

Healthy soba noodles with mushrooms and radish
Materials (4 divided)
- Buckwheat noodle 400g
- Enoki mushrooms 200g
- raddish 400g
- soba noodle soup 320g
- wasabi 1

preparation
Cut radish into strips about 2 mm thick and enoki mushrooms into 5 mm pieces. Grate the wasabi.
Recipe
- Boil soba noodles over high heat for 4 minutes, add shredded daikon radish to it and boil for 1 minute. Add only enoki mushrooms and boil for 30 seconds. (The soba noodles can be as hard as you like.)
- After boiling, drain in a colander and cool in cold water, place in a bowl, and serve with buckwheat sauce.
