We are cooperative association organized by the producers and sellers of dried buckwheat noodles in Nagano Prefecture. The cooperative strives to improve the quality of Shinshu soba and promote its popularity among consumers. The organization was reorganized in 1979, and since then has been making concerted efforts to improve production techniques and popularize soba. In addition to technical guidance, the association is also actively involved in certification based on standards set by the association.

Shinshu-soba Competition
The first Nagano Prefecture Dried Soba Exhibition was held in 1961, and the raw soba category was added in 1991. Then the name was changed to "Shinshu Soba Competitive Exhibition".
Nowadays, good raw materials are used, and buckwheat noodles with a good texture and flavor are favored.
Boiling time has been reduced by more than one minute from the past. Currently, judging is conducted using the boiling time specified by the manufacturer.
Since 2012, the public has been invited to participate in the judging.
Acquisition and Use of Registered Trademarks
This registered trademark was obtained in 1997.
Only "Certified Shinshu Soba" buckwheat noodles certified by the Association can display this trademark.
A judging committee organized by the association examines the taste, shape, aroma, and color, and designates the excellent ones as "Certified Shinshu Soba".
Certification Conditions
- Manufactured in Nagano Prefecture.
- No risk of violation of related laws and regulations.
- Containing more than 40% buckwheat flour.
- Having excellent content and design, and have dignity as Shinshu buckwheat noodles.
- Having passed the examination based on the examination rules.
