History of the Association
Around 1950, production of dried noodles began in earnest in an effort to spread delicious Shinshu soba throughout Japan.
In Nagano Prefecture, soba associations were established in the northern, eastern, central, and western regions to improve quality and develop sales channels.
In 1992, the current Nagano Shinshu-Soba Cooperative Association was organized with dried buckwheat noodle producers in the prefecture as members. The union strengthened the ties among dried buckwheat noodle producers.
Since then, the cooperative has worked to promote buckwheat noodles by improving techniques and conducting PR activities.
Recently in addition to conducting technical improvement we certify high-quality dried buckwheat noodles that contain more than 40% buckwheat flour as Shinshu buckwheat noodles, which is registered as a trademark. We are actively engaged in activities to promote the spread of our products.
